A business site starts with 4 pages: Home, About, Services and Contact.
What a starting point is

The theme composes, it does not recolour
Each theme opens with its own hero, header and rhythm; there are 8 hero compositions across the eleven, and a theme picks density and animation as well as colour.
The kind of site decides the pages
A portfolio opens with Work, a business with Services, a landing page with one long page. The sentence under the chips says exactly which pages, read from the recipe itself.
Apps add their own pages
Keep the Online Store, Blog, Bookings or Restaurant app in the wizard's last step and it creates its page beside the starter's: Store, Blog, Bookings or Menu.

Not in the sense of a fixed design you fill in. Each one is a theme composed onto the pages a kind of site needs, by the same renderer that publishes your site. Once it opens on the canvas everything is an element you can move, resize or delete.
Yes. Each card is the actual starting site rendered live at a smaller scale, not a picture of it. Hover to scroll it; the Store, Blog or Menu pages an app adds are not in the preview because they arrive when you keep that app in the wizard.
The online store kind opens with Home, About and Contact and recommends the Online Store app; keep it in the next step and the Store page is created with it. Uncheck it and you have a plain three-page site.
Yes. The editor's Theme panel lists the same themes and re-applies one in a tap, and the palette and typography under it can be edited on their own. Pages and elements stay where you put them.
Pick "Something else" as the kind of site: it opens with Home, About and Contact in the theme you chose, which is as close to blank as the wizard goes. You can delete pages and elements from there.
