A fixed deposit
Set the amount per service; the line reads "(deposit)" at checkout and the balance is yours to collect in person.
Refunds that follow the window
A customer who cancels before the window gets an automatic refund; inside it, the money stays. You can refund any time.
Paid in person
Mark a booking paid when the money came by hand or transfer; it shows the same paid pill.

No. A booking can be marked no-show, and a deposit taken at booking stays with you inside the cancel window, but no card is charged after the fact.
